The edible portion, or curd, consist of a mass of abortive flowers on thick hypertrophied branches which are produced at the top of a short, thick stem. USES Grown as a vegetable rich in vitamins and minerals. Flower heads and stalks are eaten fresh, frozen or cooked in soups, other dishes, and pickled.
