Tubers mature in 180-240 days. COMMON NAMES Potato bean, Yam bean, Jicama, Ajipo, Tuberosus yam bean. FURTHER INF Scientific synonyms: Cacara tuberosa, Dolichos tuberosus, Stizolobium tuberosum. The species is indigenous to the Amazon headwater region of South America and to parts of the Caribbean. The plant can reach 5 m in length. Only the tuber is safe to eat. Leaves, stems, roots, ripe pods, and seeds can be toxic to humans. |
